Tomato, Celery & Apple Soup

Serves 6 (children’s portions)


  • • 2 sticks of celery (washed & sliced finely)
  • • 1½ apples peeled and cut into cubes
  • • 1 tin of chopped tomatoes (low sugar)
  • • ¼ pint of hot water
  • • 1 vegetable stock cube (low salt)
  • • 1tbsp oil



  1. Heat the oil in a saucepan
  2. Gently sauté the celery and apple together for about five minutes
  3. Add a little water and cover to soften for a few minutes
  4. Dissolve the stock cube in the hot water and add into the saucepan
  5. Add in the chopped tomatoes and bring to the boil
  6. Once the soup mixture is boiling, reduce the temperature and simmer for 20 mins
  7. Using a blender, liquidise to the desired consistency

Lentils may also be added to this recipe as a good protein source. Just add the lentils in before adding the stock.
