This is a great alternative for people who are dairy-free or for anyone fed up with yoghurt. It’s made from cashews so is crammed full of vitamin E and magnesium – perfect for keeping a winter cold at bay.
You can use this as a replacement for cream with desserts or as a base for curries in place of coconut cream. For breakfast top it with your favourite nuts, seeds and fresh fruits.
• 100g of cashew nuts
• 25g mixed seeds
• 25g goji berries
• handful raspberries
Soak 100g of cashew nuts in 50ml of water for 30mins. When softened blend until smooth in a food processor. Loosen with a little extra water if needed. Store in a jar in the fridge for up to 4 days.
